Curried scrambled egg

Recipe Ingredients
6 large eggs, lightly beaten;
2 medium potatoes, boiled and cut into cubes;
8 spring onions, trimmed and sliced;
50g butter;
salt and pepper;
2 tsp Tikka Spice blend;
4 naan breads;
fresh chopped coriander to garnish.
 
Recipe Method
Season the beaten eggs.

In a nonstick pan melt the butter and cook the spring onions until they start to soften. Add the spice blend, cook for a further minute stirring continuously.

Add the cooked potato cubes and the eggs and keep stirring over a low heat until the mixture is lightly set. Sprinkle with the fresh coriander.

Grill the naan breads for a couple of minutes and serve with the egg mixture on top.
