2 skinless chicken breasts; 2 tsp Cajun seasoning; 2 tbsp plain flour; 2 tbsp olive oil; half a fresh pineapple, peeled and roughly chopped; juice of 1 lime; 1 red chilli, deseeded and finely chopped; 1 tbsp chopped fresh mint. |

In a bowl mix together the flour and cajun seasoning, and sprinkle on a plate. Coat the chicken breasts with half of the oil and then coat well in the seasoned flour. In a nonstick frying pan heat the remaining oil and cook the chicken breasts for 2 minutes on each side. Transfer the chicken to an ovenproof dish and cook in a preheated oven (200c/gas6) for 20 mins until cooked through. Meanwhile mix together the pineapple, lime juice, mint and chilli. Serve the chicken with the pineapple salsa. |
