Stout and onion soup

Recipe Ingredients
440ml can stout;
3 large onions, thinly sliced;
3 tbsp beef gravy concentrate;
1 tsp granulated sugar;
3 tbsp sunflower oil;
salt and pepper;
2 bay leaves;
2 tsp chopped fresh thyme, plus sprigs to garnish.
 
Recipe Method
In a large pan heat the oil and add the onions and sugar. Season with salt and pepper. Gently cook for 30 minutes, stirring occasionally until light brown.

In a separate pan put the beef gravy concentrate with 750ml cold water. Bring to the boil.

Add the gravy to the onions and add the remaining ingredients. Cover and simmer for 30 minutes. Remove the bay leaves and garnish with the thyme sprigs to serve.
