corned beef fritatta

Recipe Ingredients
2 eggs, lightly beaten;
1/3 of a tin corned beef, chopped;
1/3 of a can of sweetcorn;
1 small onion, chopped;
1 tbsp oil;
chips to serve

 
Recipe Method
In a nonstick frying pan heat the oil and cook the onion. Add the corned beef cubes and pour over the eggs. Cook until it starts to set then scatter the sweetcorn over the top. Finish cooking it under the grill. Serve with chips.
