1 large white baguette; 70g pastrami, each slice cut in half; 200g soft cheese; 1 tsp creamed horseradish; 3 baby gherkins, thinly sliced; 2 baby cooked beetroots, diced; 4 tbsp olive oil. |

Remove the ends of the baguette and cut into approximately 20 diagonal slices. Brush two baking trays with some of the olive oil, place the baguette slices on top and spinkle the remaining oil over the bread. Bake for 15 mins in a preheated oven (190c/gas 5) until golden. Leave to cool. In a bowl add the soft cheese and horseradish and blend together. Spread this on top of the baguette slices. Fold a piece of pastrami on top of each crostini and garnish with the beetroot and gherkins. |
