275g back bacon, trimmed of fat; 200g frozen raw king prawns, defrosted, washed and dried; 400g frozen mussels, defrosted, remove from shells; 1 courgette, sliced; 1 red pepper, chopped; 1 tbsp olive oil; salt and pepper. makes 8 kebabs |

Slice the bacon rashers into thin strips lengthways and then cut each strip in half. Season the mussles and prawns with salt and pepper. Wrap a strip of bacon around each of the prawns and mussels. Thread onto 8 skewers with alternate pieces of courgette and red pepper. Brush the kebabs with the oil and cook under a preheated grill for 4 mins on each side, until cooked through and golden. Drain on a piece of kitchen paper. |
