60g butter 120g caster sugar 1 egg 2 large ripe bananas - mashed to a pulp 240g wholemeal self-raising flour pinch of salt 3 tablespoons natural yogurt |

Cream together the butter and sugar until light and fluffy. Beat in the egg, and then the banana. Add the salt to the flour. Then beat in a third of the flour, then a third of the yogurt. Repeat with the remaining flour and yogurt. Spoon into a lined 2lb loaf tin and bake in a preheated oven gas 4/180c for 1 hour. |
