115g butter, at room temperature; 90g soft light brown sugar; 65g crunchy peanut butter; 1 egg; 50g plain flour; 1/2tsp baking powder; 1/2tsp ground cinnamon; 1/4tsp salt; 175g muesli; 50g raisins; 50g chopped walnuts. makes about 18 cookies |

Cream the butter and sugar until light and fluffy. Beat in the peanut butter and then the egg. Sift in the flour, baking powder, salt and cinnamon. Mix and then mix in the muesli, raisins and walnuts. Drop rounded tablespoonfuls of the mixture, about 3cm apart, onto a large greased baking tray. Gently flatten with the back of a spoon. Bake for 15 minutes at 180c/gas4 until lightly coloured. Cool on a wire rack. |
