Chocolate chip cookies

Serves: 12

Recipe Ingredients
115g butter, at room temperature;
45g caster sugar;
100g soft dark brown sugar;
1 egg;
1/2 tsp vanilla extract;
175g plain flour;
1/2 tsp bicarbonate of soda;
1/4 tsp salt;
175g chocolate chips;
50g chopped walnuts (optional).

will make about 24 cookies
 
Recipe Method
Using an electric mixer, cream the butter and sugar until light and fluffy.

In a separate bowl, mix together the egg and vanilla extract, then gradually beat into the butter mixture.

Sift in the flour, bicarbonate of soda and salt. Mix and then mix in the chocolate chips and walnuts if using.

Place heaped teaspoonfuls of the dough (about 5cm apart)on greased baking sheets.

Bake at gas4 or 180c for 10-15 minutes until lightly coloured. Cool on a wire rack.
