Braised red cabbage

Serves: 6

Recipe Ingredients
1kg red cabbage, finely shredded;
2 cooking apples, peeled, cored and coarsley grated;
2 onions, chopped;
1tsp freshly grated nutmeg;
1/4tsp ground cloves;
1/4tsp ground cinnamon;
1 tbsp soft dark sugar;
3 tbsp red wine vinegar;
25g butter, diced.
 
Recipe Method
Layer the shredded cabbage with the grated apple and onions in an ovenproof dish. Sprinkle over the spices, sugar and salt and pepper. Pour the vinegar over and scatter over the diced butter. Cover with a tight fitting lid.

Cook for about 1 hour 30 minutes at 160c/gas3, stirring occasionally, until the cabbage is tender.
