1 red cabbage, shredded; 2 red onions, peeled and sliced; 225g fresh cranberries; 50g butter, melted; 3 juniper berries; 1/2tsp ground cinnamon; 1/2tsp ground ginger; 5 tbsp soft brown sugar; 5 tbsp red wine vinegar. |

Place some of the shredded cabbage in a layer in the bottom of a casserole dish. Add a layer of the red onion and then scatter over a handful of cranberries. Repeat the layers fininshing with the cranberries on the top layer. Put the melted butter into a bowl along with the juniper berries, cinnamon, ginger, sugar and vinegar. Whisk together and then season with salt and pepper. Pour over the cabbage and cover. Cook at 150c/fan130c/gas2 for 2 1/2 to 3 hours, stirring occasionally until the cabbage is tender. |
