Little cranberry rock cakes

Recipe Ingredients
100g self-raising flour;
50g unsalted butter;
1 tsp ground mixed spice;
50g light muscovado sugar;
85g dried cranberries;
1 apple, halved, cored and finely diced;
1 egg, lightly beaten;
1 tbsp milk;
icing sugar for dusting.
 
Recipe Method
Put the flour in a bowl and add the butter. Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.

Add the spice, sugar, cranberries, apple, egg and milk. Mix until forms a soft dough.

Lightly oil a non-stick baking sheet. Using a tablespoon, drop spoonfuls (approx 8) of the dough onto the baking sheet, spacing well out. Bake for 20 minutes at 180c/fan 160c/gas4 until golden. Cool on a wire rack and dust with icing sugar.
