Mincemeat fairy cakes

Recipe Ingredients
175g self-raising flour;
100g light muscovado sugar;
1 tsp mixed spice;
175g softened butter;
3 eggs;
2 tbsp milk;
approx 140g mincemeat;
icing sugar, for dusting.
 
Recipe Method
Put the flour, sugar, spice, butter and eggs into a large bowl and beat for a few minutes until light and fluffy.

Line a 12 hole bun tin with paper cases. Put a spoonful of mixture into each case and then a teaspoon of mincemeat on top. Cover the mincemeat with another spoonful of cake mix and smooth the tops with the back of a teaspoon.

Heat the oven to 190c/fan 170c/gas5 and bake for 15-18 minutes until firm and golden brown. Dust with icing sugar to serve.
