makes 25-30 truffles: 200g good quality dark chocolate, broken into small pieces; 150ml double cream; 3 tbsp malt whisky; 115g icing sugar; cocoa powder, for coating. |

Melt the chocolate in a heatproof bowl set over a pan of simmering water, stirring continuously until smooth. Allow to cool slightly. Put the cream in a large bowl along with the whisky and whip until holds its shape. Stir in the cooled melted chocolate and icing sugar and leave until firm enough to handle. Dust your hands with cocoa powder and shape the mixture into bite-sized balls. Coat in cocoa powder. Store in the fridge for 3 to 4 days. |
