75g plain flour; 1/2tsp salt; 1/4tsp baking powder; 115g fine pinhead oatmeal, plus extra for spinkling; 65g white vegetable fat; Will make about 18 |

Sift the flour, salt and baking powder into a large bowl. Mix in the oatmeal and rub in the fat until the mixture resembles breadcrumbs. Blend in enough water to make a stiff dough. Sprinkle the work surface with some oatmeal and knead the oatmeal mixture until smooth and manageable. Roll out to a thickness of about 3mm. Cut into rounds and place on a greased baking sheet. Bake for 15 minutes at 200c/gas6/400F until crisp. Cool on a wire rack. |
