115g plain flour; 1 tsp bicarbonate of soda; 1 tsp cream of tarter; 25g butter, diced; 1 egg, beaten; 150ml milk; butter,honey or syrup to serve |

Lightly grease a griddle pan and heat. Sift the flour, bicarbonate of soda and cream of tarter into a bowl. Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs. Make a well and stir in the egg. Add the milk, a little at a time, stirring to check consistency. Add enough milk to give a thick creamy consistency. Cook in batches. Drop 3 or 4 evenly sized spoonfuls of the mixture, spaced evenly apart, on the hot griddle pan. Cook for 2-3 minutes on each side. Serve warm with butter, honey or golden syrup. |
