3 slices meduim white bread; 150g courgette, grated and juice squeezed out; 100g dried apricots; handful of parsley; 225g sausagemeat; 2 tbsp chestnut puree; 1 tbsp oilve oil. |

Put the slices of bread in a food processor and whiz until fine breadcrumbs. Add the courgette, apricots and parsley and whizz until finely chopped. Add the sausagemeat and chestnut puree, season and process until combined. Divide the mixture in half - use half with your turkey - the other half roll into 12 small balls on a lightly floured work surface. Brush a non-stick baking tray with a little oil, then place the balls on and bake for 30 minutes at gas 4, 180c, 350F, until golden and cooked through. |
