Barley and vegetable soup

Serves: 4

Recipe Ingredients
225g pearl barley;
2 litres meat stock;
3 tbsp olive oil;
2 carrots, peeled and finely chopped;
1 large potato, peeled and finely chopped;
115g diced ham;
1 bay leaf;
3 tbsp chopped fresh parsley;
1 small sprig rosemary.
 
Recipe Method
Rinse the barley under cold water and the soak in cold water for at least 3 hours. Drain.

Put the barley in a saucepan, along with the stock and bring to the boil. Gently simmer for 1 hour.

Add the oil, vegetables, ham and herbs (add hot water if necessary), simmer for 1 hour. Season to taste.
