2 tbsp olive oil; 1 onion, chopped; 250g back bacon, chopped; 350g long grain rice; 250g frozen petit pois; 2tsp mixed dried herbs; 100g Parmigiano Reggiano, grated. |

Heat the oil a pan and fry the onion and bacon until the onion is soft and the bacon starting to crisp. Add the rice and stir until all the grains are coated in oil. Add the peas, herbs and 850ml of hot water. Season and bring to the boil. Cover and simmer for 12 minutes until the water has been absorbed and the rice tender. Stir in the parmesan and serve. |
