Mushroom noodle soup

Recipe Ingredients
2 tbsp vegetable oil;
2 spring onions,finely slice;
1 garlic clove, thinly sliced;
125g mushrooms, thinly sliced;
25g fine rice noodles;
1/2 cucumber, cut in half lengthways,deseeded and thinly sliced;
3/4 tsp salt;
1 tbsp soy sauce.
 
Recipe Method
Heat the oil in a wok. Stir-fry the spring onions and garlic for 30 seconds, then add the mushrooms and cook for 3 minutes.

Add 600ml of water along with the noodles. Bring to the boil. Add the cucumber, salt and soy sauce and simmer for 3 minutes.
