170g jam (any flavour, you choose); 2tbs milk; 125g butter; 1 tsp vanilla essence; 185g plain flour; 1 tsp baking powder; 75g caster sugar; makes about 40 biscuits |

Line a baking tray with baking paper. In a large bowl add the butter, sugar and vanilla essence and beat with electric beaters until creamy and pale. In a separate bowl sift together the flour and baking powder. Add this to the butter mixture along with the milk. Use a wooden spoon and mix until a soft dough. With lightly floured hands roll the dough into small balls and place on the baking tray about 5 cm apart. Flatten each ball until it is about 3.5cm wide. using your finger make an indent in the center of each (make indent about 2cm wide). Fill each indent with a generous dollop of jam. Bake for 20 mins in a preheated oven (180c, 350F) or until lightly golden. Allow to cool for a few minutes before turning out onto a wire rack. Repeat with the remaining dough and jam. |
