350g self-raising flour; 100g caster sugar; 85g butter, cut into small pieces; 175ml buttermilk (or natural low-fat yogurt); whipped cream and strawberry jam to serve. makes approx 12 scones |

Put the flour and sugar in a bowl and mix together. Using your fingertips, rub in the flour until the mixture resembles fine breadcrumbs. Make a well in the centre and add the buttermilk. Mix to form a soft dough. Briefly kneed the dough on a lightly floured surface. Press the dough out to a thickness of about 2.5cm. Cut out rounds with a 5cm cutter. Place the scones on a baking sheet, spaced a little apart. Bake for 12-15 minutes at 200c/fan 180c/gas 6, until risen and light golden. Leave to cool on a wire rack. Serve with whipped cream and jam! |
