300g good quality dark chocolate, roughly chopped; 250ml double cream; 6 eggs, separated; 1 tbsp caster sugar; 100g hazelnuts to serve. |

In a heat resistant bowl add the chocolate and 125ml of the cream. Melt over a pan of simmering water stirring until mixture is smooth. Remove from heat and leave until almost cooled down to room temperature. In another bowl add the egg yolks and caster sugar, beat with electric whisks until creamy and pale. Stir in the chocolate mixture. Whisk the remaining cream until it forms soft peaks. Then fold the cream, a spoonful at a time, into the chocolate mixture until combined. In a clean bowl whisk the egg whites until forms soft peaks. Then fold into the chocolate mixture until combined. Pour this mixture into an airtight container. Freeze for about 5 hours, or until firm. Lightly toast the hazelnuts, and once cool chop up roughly. Serve the frozen chocolate mousse with the toasted hazelnuts scattered on top. |
