Green apple salad

Recipe Ingredients
1 garlic clove, finely chopped;
1 red chilli, seeded and finely chopped;
1 tsp sugar;
1 tbsp fish sauce;
juice 2 limes;

2 shallots, finely sliced;
1 tbsp vegetable oil;
5 sharp green apples, such as granny smiths, cored and finely sliced;
1 tbsp lime juice;
6 cherry tomatoes, cut into quarters;
2 tbsp dry roasted peanuts, crushed;
handful coriander leaves.

 
Recipe Method
First make the dressing by putting the garlic, chilli and sugar in a processor, process to make a rough paste. Add the fish sauce, lime juice and season.

Heat the oil and fry the shallots until crisp and golden brown. Carefully remove with a slotted spoon and drain on some kitchen paper. Toss the apple slices in the lime juice in a bowl and then add the tomatoes and dressing. Spoon onto a plate and top with peanuts, shallots and coriander.
