| Recipe Ingredients |

3 tbsp olive oil; 2 onions, finely chopped; 2 cloves garlic, finely chopped; 2 tsp coriander seeds, crushed; 1 tsp cumin seeds, crushed; 1 tsp tumeric; 750g mushrooms, quartered, halved or whole so that they are the same size; juice of half a lemon; large tbsp of fresh chopped coriander; little gem lettuce and lemon wedges to serve. |

Heat the oil in a large non-stick frying pan and gently cook the onion for about 5 minutes until soft. Add the garlic amd cook for a further minute. Add the crushed seeds and tumeric stir for a minute. Add the mushrooms and lemon juice, season. Cook gently for 12 minutes until all the moisture has evaporated. Transfer to a bowl and stir in the coriander. Leave to cool. Serve at room temperature with the lettuce leaves and lemon wedges. |
