Herb salmon with lemon mash

Serves: 4

Recipe Ingredients
50g fresh brown breadcrumbs;
2 cloves garlic, peeled and crushed;
8 fresh basil leaves, shredded;
1 tbsp snipped fresh chives;
2 sun-dried tomatoes in oil, drained and finely chopped, plus 2 tbsp oil from the jar;
salt and freshly ground black pepper;
4 skinless, boneless salmon fillets;

for mash:
1.1kg potatoes, peeled and cut into chunks;
25g butter;
8 tbsp milk;
12 fresh basil leaves;
1 tsp grated lemon rind.

 
Recipe Method
Mix the bread crumbs with the garlic, basil, chives, sun-dried tomatoes and their oil. Season with salt and pepper.

Arrange the salmon fillets on a baking sheet; evenly press crumbs on top of each fillet.

Cook the potatoes in a pan of boiling, lightly salted water for 20 mins until tender. Meanwhile bake the salmon for about 10 minutes (at 200c/gas 6) until its just cooked and the crumbs are crispy.

Drain the potatoes, mash with butter, milk, basil and some seasoning. Stir in the lemon rind. Serve the mash along with the salmon.
