50g pine nuts; 1/2 small baguette, cut into small bite-sized pieces; 3 tbsp olive oil; 1 tbsp white wine vinegar; 1 head cos lettuce, shredded; 55g wild rocket; 50g Stilton, crumbled. |

Put the pine nuts on a baking tray and bake in the oven for 5 minutes at 200c or gas 6. Put the baguette pieces on another tray and drizzle over 1 tbsp olive oil. Bake for about 10 minutes. In a bowl mix together the remaining oil and white wine vinegar and season. Arrange the lettuce, rocket and croutons in a serving bowl. Add the Stilton and pine nuts to the dressing and pour over the salad and toss. |
