Beef and onion braised in Guinnessby Derek Lowery |

500g cubed braising beef; 3 onions, sliced; olive oil; seasoned plain flour, for dusting; 440ml can Guinness; 1 tbsp muscovado sugar; 400ml beef stock; 4 large potatoes, peeled and quartered. |

Heat about 2 tbsp olive oil in a large frying pan and gently cook the onions until golden brown. Transfer the onions to a casserole dish. Toss the beef chunks in the seasoned flour and fry in some more olive oil until brown all over. Transfer the meat to the casserole dish. Add the guinness to the frying pan and sprinkle in the sugar. Add the stock and simmer for about 1 minute. Pour over the beef and onions and cover. Cook in a hot oven 170c/gas3 for 1 hour 30 minutes and then add the potatoes. Return to the oven for a further one hour. This is nice served with cabbage. |
