Chocolate fudge

Recipe Ingredients
100g caster sugar
2 tablespoons cocoa powder
50ml milk
25g butter
1/2 teaspoon vanilla essence
 
Recipe Method
Put the sugar and cocoa into a pan and mix. Add the milk and butter. Heat gently, stirring constantly until sugar has dissolved and butter melted. Bring to the boil. Do not stir and let the mixture boil until the soft ball stage. Remove from the heat. Add the vanilla and leave to stand for 5 minutes. Beat with a wooden spoon until thick. Pour into a buttered tin and mark into squares. Cut when cold.
