Courgette salad

Recipe Ingredients
1kg courgettes, thinly sliced lengthways;
1 tbsp finely chopped fresh rosemary;
7 tbsp olive oil;
1 tbsp balsamic vinegar;
1 clove garlic, crushed;
2 tbsp chopped fresh parsley.
 
Recipe Method
Put 4 tablespoons of the olive oil in a bowl and add the rosemary, mix and use to brush the courgette slices.

Heat a gridle pan and cook the courgette slices for 2-3 minutes on each side until browned (will need to do this in batches).

In another bowl mix the remaining oil, vinegar, garlic and parsley. Season to taste. Pour the dressing over the courgettes whilst they are still warm.
