2 small avocados, peeled, stoned and diced; juice of 2 limes; 2 small mangoes, peeled, stoned and diced; 2 red chillies, seeded and finely chopped; 1 small red onion, finely chopped (spring onions can also be used); 1 tbsp chopped coriander leaves; 4 tbsps olive oil |

Put the diced avaocado in a bowl and squeeze the juice of 1 lime over and gently toss, to prevent discolouration. In a serving bowl put the chillies, onion, coriander, remaining lime juice and olive oil. Stir and sesaon then add the avocado and mango pieces. This salad is good served with a portion of fresh turbot. |
