Sweet potato crisps

Recipe Ingredients
750g sweet potato, peeled and cut into thin strips;
vegetable oil for frying;
salt;
dips to serve
 
Recipe Method
Heat the oil in a deep-fat fryer or a heavy based pan.

Fry the potatoes in batches until crisp, making sure the oil stays hot at all times.

Drain on kitchen paper and immediately sprinkle with salt. Serve the crisps cold with dips.
