lemon and chocolate mousse

Recipe Ingredients
100g plain chocolate, broken up into pieces;
150g white chocolate, broken up into pieces;
zest and juice of 1 lemon
2 medium sized eggs, separated;
8 tbsp fromage frais
 
Recipe Method
In separate bowls melt the white and plain chocolate, over pans of simmering water.

To the melted white chocolate add one egg yolk, the zest and juice of the lemon, and 4 tbsp of the fromage frais. Beat until smooth.

Into the melted plain chocolate add the other egg yolk and the remaining fromage frais. Beat until smooth.

In another bowl whisk the egg whites until stiff.

Fold half the egg whites into the white chocolate mixture and half into the plain chocolate mixture.

In 6 small glasses place alternate layers of the mousse until you have 4 layers in each glass.

Chill.
