450g minced beef; 1 green pepper, diced; 1 onion, finely chopped; 2 cloves garlic, crushed; 100g mushrooms, finely sliced; 400g can chopped tomatoes; 3 tbsp tomato puree; 150ml red wine; 150ml beef stock; 2 tsp dried oregano; 2 tsp caster sugar; 2 bay leaves olive oil tagliatelli, enough for 4 people |

Fry the onion and green pepper in some olive oil until lightly golden. Add the mince and brown. Once the mince is brown add the tomato puree, tomatoes, garlic, stock, wine, oregano, sugar and bay leaves. Season. Allow to simmer gently for 2 hours. Add the mushrooms and then cover and cook for a further 30 minutes. Cook the tagliatelli and mix the beef sauce through to serve. |
