Vegetable and corn chowder

Serves: 4

Recipe Ingredients
1 red onion, diced;
1 red pepper, diced;
3 crushed garlic cloves;
1 lg potato, diced;
50g broccoli florets;
300g canned sweetcorn;
75g cheddar cheese;
2 tbsp plain flour;
600ml/1 pint milk;
1 tbsp vegetable oil;
300ml vegetable stock;
salt and pepper;
 
Recipe Method
Heat the oil in a large pan and gently cook the onion, pepper, garlic and potato for 3 mins.

Add the flour, stir and cook for 30 secs, then gradually add the milk and stock.

Add the broccoli and sweetcorn.

Bring to the boil, stirring, then reduce heat and simmer for 20 mins or until the vegetables are tender.

Stir in 50g of the cheese until it melts. Season with the salt and pepper.

serve with the remaining cheese to garnish.

nb. for a really creamy soup add double cream after adding the milk
