enough cooked rice for 2 people, 5 spring onions, chopped, 2 red chillies, finely chopped, 2 tablespoons Thai fish sauce, 2 tablespoons soy sauce, 2 eggs, lightly beaten and seasoned, 2 tablespoons vegetable oil |

In a wok or large frying pan heat the oil and stir fry the spring onions and chillies for one and a half minutes. Add the cooked rice, mix through and stir fry for 4 mins. Add the fish and soy sauce and mix through. Use the egg to make a very thin omelette in another frying pan, roll up and cut into strips. Serve ontop of the rice. |
