Prawn and mushroom pasta with fresh dill

Recipe Ingredients
150g cooked jumbo tiger prawns;
125g chestnut mushrooms, sliced;
200g spaghetti;
1 garlic clove, crushed;
1 shallot, finely chopped;
2 tbsp fresh dill;
40g rocket;
zest and juice of 1 lemon;
4 tbsp creme fraiche;
1 tbsp olive oil.
 
Recipe Method
Cook the pasta according to the packet instructions.

Meanwhile gently fry the garlic and shallot in the oil for 3 minutes. Add the mushrooms and cook for a further 5 minutes. Add the lemon juice and zest, creme fraiche and the prawns. Allow to cook for few minutes. Season.

Drain the pasta and add to the sauce. Add the dill and rocket and toss through.
