Lemon linguine with tenderstem broccoli

Recipe Ingredients
zest and juice of 1/2 a lemon;
300g linguine;
400g tenderstem broccoli;
2 cloves garlic, crushed;
50g toasted pine nuts;
1 tbsp olive oil;
grated parmesan to serve
 
Recipe Method
Cook the linguine according to the packet instructions.

Meanwhile, blanch the broccoli for 2 minutes in boiling water, and drain.

In a frying pan, heat the oil and cook the garlic for half a minute, then add the broccoli and fry for a further 2 minutes. Add the toasted pine nuts and lemon zest and fry for 1 minute.

Drain the pasta and return it to the pot. Add the broccoli mixture and lemon juice. Toss and serve with the grated parmesan.
