Chocolate cake

Recipe Ingredients
50g cocoa powder, sifted;
3 eggs;
150g self-raising flour;
40g plain flour;
1 tsp vanilla essence;
275g caster sugar;
125g butter, plus extra for greasing;
125ml boiling water;
icing sugar for dusting
 
Recipe Method
Grease a 22cm, deep round cake tin and line the base with baking paper.

Put the sifted cocoa powder in a bowl. Add the water gradually, stirring to form a smooth thick paste.

Beat the butter, caster sugar and vanilla essence together in a bowl using electric whisks until pale. Add one egg at a time whisking after each addition until combined.

In a bowl sift together the plain and self-raising flour. Fold a large spoonful of the flour mixture into the butter mixture, then fold a large spoonful of the cocoa mixtute into butter mixture. Repeat until all combined.

Spoon the mixture into the cake tin and smooth. bake in a preheated oven, 180c/350F, for 45 minutes. After a few minutes turn out onto a wire rack to cool. Serve dusted with icing sugar.
