Split pea soup with cumin

Recipe Ingredients
250g split peas;
1 leek, choppped;
1 onion, chopped;
2 large carrots, chopped;
2 pints of vegetable stock;
1 tsp ground cumin;
olive oil
 
Recipe Method
Soak the split peas in cold water for about 2 hours before cooking.

Heat the olive oil and gently soften the onion, leek and carrot. Add the cumin and stir.

Add the stock and split peas. Season and bring to the boil. Leave to simmer gently for 2 hours.
