warm fruit kebabs with mango coulis

Serves: 4

Recipe Ingredients
2 ripe pears, cored and thickly sliced;
2 firm bananas, thickly sliced;
half a pineapple, peeled and cut into bitesized pieces;
2 nectarines, thickly sliced;
1 ripe mango, peeled, stoned and chopped;
juice of 1 orange;
juice of 1 lemon;
1 tsp honey.

8 wooden skewers, soaked in cold water
 
Recipe Method
Add the bananas and pear slices to the lemon juice to prevent them turning brown.

Add half the orange juice and the mango to a blender and blend until smooth.

Thread the fruit onto the skewers.
To the remaining orange juice add the honey and stir. Brush this mixture over the fruit.

Grill the kebabs for four minutes until warm and serve with the mango coulis.
