Maryland drumsticks

Recipe Ingredients
1.13kg chicken drumsticks;
125g plain flour;
1/2tsp cayenne pepper;
2 eggs, beaten;
225g white breadcrumbs;
sunflower oil for frying.
 
Recipe Method
Season the flour with the cayenne pepper and salt. Coat the chicken drumsticks in the flour, then in the egg and then in the breadcrumbs.

Add the oil to a deep pan, until it is about half full, and heat. When the oil is hot add the drumsticks in batches, cooking each batch for 15 minutes until golden and cooked through. Remove from the oil and drain on kitchen paper. Keep warm until ready to serve.
