175g macaroni; 2 carrots, cut into chunks; 200g broccoli florets; 1 leek, trimmed and cut into slices; 600ml milk; 50g butter; 50g plain flour; 200g mild cheddar, grated; pinch cayenne pepper. |

Cook the macaroni according to pack instructions. Cook the carrot in a pan of boiling water for 3 minutes, then add the broccoli and cook for 9 minutes, add the leeks and cook for a further 3 minutes. Drain. Melt the butter in a pan and stir in the flour. Cook for 1 minute. Gradually stir in the milk and whisk until the sauce boils and thickens. Add three-quarters of the cheese and season with the pepper. Mix the pasta and vegetables with the sauce and put in an ovenproof dish. Sprinkle the remaining cheese on top and put under a hot grill until the cheese has melted. |
