225g macaroni; 175g Lancashire or mature cheddar cheese, grated; 40g butter; 40g plain flour; 1/2 tbsp English mustard powder; 570ml milk; pinch cayenne pepper; 1 tbsp fresh breadcrumbs. |

Cook the macaroni according to the pack instructions. Drain and set aside. In a pan melt the butter and add the flour, mustard and cayenne pepper and cook for 2 minutes. Take off heat and stir in milk gradually. Return to the heat and stir until the sauce thickens. Simmer for two minutes. Remove from heat. Add the macaroni and and all but 1 tablespoon of cheese, season. Transfer to a casserole dish and top with the remaining cheese and breadcrumbs. Put under a hot grill for 5 minutes until golden. |
