Beetroot and orange soup

Serves: 4

Recipe Ingredients
250g cooked beetroot, diced;
zest and juice of 1 orange;
1 onion, finely chopped;
600ml vegetable stock;
1 tbsp sunflower oil;
soured cream to serve.
 
Recipe Method
In a pan heat the oil and gently cook the onion for about 10 minutes until soft. Add the beetroot, vegetable stock, orange zest and juice. Simmer for 10 minutes.

Remove from the heat and allow to cool slightly. Transfer to a blender and blend until smooth. Chill. Serve with a spoonful of soured cream.
