mixed bean pate

Serves: 4

Recipe Ingredients
400g can of mixed beans, drained (or use any beans of your choice);
4 spring onions: 2 chopped and 2 shredded;
2 cloves of garlic, crushed;
juice of 1 lemon;
1 tbsp coriander, chopped;
2 tbsp olive oil;
salt and pepper;
 
Recipe Method
Make sure the beans are rinsed with water and well drained.

Transfer beans to a food processor and blend until smooth (a potato masher could also be used).

Then add to the blended beans the garlic, chopped sping onions, lemon juice, coriander and olive oil and blend again until smooth.
Season with the salt and pepper.

Transfer the mixture to a serving dish.

Place in the refrigerator to chill for at least 45 mins.

Serve spinkled with the shredded spring onions.
