Poached eggs on potato rostis

Serves: 4

Recipe Ingredients
4 large eggs;
2 large potatoes;
15g butter;
2 tbsp olive oil;
salt and pepper;
flat-leaf parsley, chopped.
 
Recipe Method
Put the potatoes in a pan of boiling water, with the skins on, for 10 mins. Remove and leave to cool. Peel and coarsely grate. Season. Shape into 4 large rostis.

Heat the oil and butter in a nonstick frying pan and cook the rostis over a low heat for 10 minutes. Turn over and cook for a further 5 minutes.

Meanwhile poach the eggs. Poach for 3 to 4 mins until the whites are just set and the yolks runny.

Serve the rostis topped with a poached egg and a sprinkling of parsley.
