Autumn apple sponge cake

Recipe Ingredients
2 gala apples, cored and sliced;
2 eggs;
grated zest and juice of 1 lemon;
125g self-raising flour;
125g caster sugar;
125g butter;
2 tbsp sultanas;
1 tsp baking powder.
 
Recipe Method
Grease and line the base of a 20cm loose-based cake tin.

Put the apple slices in a bowl with the lemon juice toss to mix and set aside.

Sieve the flour and baking powder into a large bowl. Add the butter, sugar, eggs, lemon zest and sultanas. Beat together with a wooden spoon until well mixed.

Pour the mixture into the cake tin and level the top. Drain the juice from the apples and arrange on top of the cake mixture.

Bake for 35 mins in a preheated oven (180c /gas 4) until the middle of the cake is cooked. Leave to cool before removing it from the tin.
