Plum clafoutisby mary campbell

|500g British Victoria plums, halved, stoned and
75g plain flour;
50g caster sugar;
200ml coconut milk;
1 tbsp desiccated coconut;
50ml semi-skimmed milk;
3 large eggs;
15g butter for greasing;
1 tsp natural extract of vanilla.
|Grease a shallow ovenproof dish. Arrange the
plums in the dish in an even layer. Place in a preheated oven
(200c/gas 6) for 5 mins so that the dish is hot.
Meanwhile sift the flour into a bowl and add the sugar. In a separate bowl mix together the coconut milk, milk, eggs and vanilla. Whisk this into the flour mixture to make a smooth batter.
Pour the batter over the plums. Bake for 25 mins until set and golden.
Sprinkle the desiccated coconut over the top. Serve immediately.
