| Recipe Ingredients |
| 6 chicken breasts, cooked and sliced; 3 fresh ripe peaches, skinned, stoned and chopped; 225g Greek style natural yogurt; 5 tbsp mayonnaise; grated zest and juice of 1 lemon; 1 piece stem ginger in syrup, drained and finely choppped; salt and pepper; 50g pecans, roughly chopped; 80g rocket leaves. |
| Recipe Method |
| In a bowl put the mayonnaise, lemon zest, yogurt
and ginger. Blend together to make a dressing. Put the flesh of one of the peaches and 1 tbsp of lemon juice in a blender to puree. Stir this into the yogurt dressing. Season with salt and pepper. Stir the cooked chicken into the dressing. Cover and chill until ready to serve. To serve, place the rocket on a serving plate and spoon the chicken mixture on top. Slice the remaining peaches and scatter on top along with the chopped pecans. |
